Description

This single-varietal Pinot Noir cuvée comes from a single, historic parcel "Les Crayères" in Ambonnay, planted from 1946/47 on a thin layer of soil over deep chalk. Manual harvest, spontaneous fermentation, followed by 12 months of aging in barriques (10-25% new), then 64-72 months on the lees. Bottled without filtration or fining, dosage only 1-2 g/l as Extra Brut.
