With "Les Vignes de Bisseuil", Egly-Ouriet presents a terroir-driven cuvée from Premier Cru vineyards in Bisseuil – located east of Aÿ, on lean, chalky soils. The approximately 40-year-old vines yield low harvests, which are vinified into a complex, well-structured Champagne through spontaneous fermentation in wooden barrels (10% new) and 48 months of aging on lees. The dosage is only 1–2 g/l (Extra Brut), without filtration or fining.

The wine shows intense aromas of white flowers, pear, citrus fruits and mirabelle plum, accompanied by brioche, toasted nuts and chalky minerality. On the palate, it is very precise, salty and vibrant, with fresh acidity and impressive depth – a Premier Cru with Grand Cru ambitions.
