The Dom Pérignon is named after the Benedictine monk Pérignon, who decisively developed the Méthode champenoise further in the 17th century. Today it is considered an ingenious combination of tradition and modern art by the cellar master. In 2012, the dry, hot summer made for a perfect ripening period. The grapes harvested between September 10th and 26th show a perfect balance between tension, freshness and fullness. Despite the low yields, 2012 is a great champagne vintage.
