The Hermitage vineyard hides a treasure. It is the only appellation in the world where four geological epochs are visible. Aware of this impressive variety of soils, Michel Chapoutier decided to vinify the grapes from these expressive terroirs separately. The terroir can unfold unhindered in these single-vineyard wines. For Michel Chapoutier, they are a precise reflection of their origins. They tell us everything about the peculiarities of the soil, about the climate (in which the vintage plays an important role), about the great talent and passion of the winemaker. The vines for Les Varonniers, which are on average 60 years old, grow on terraces on the steep granite slope of the Chassis plot.
