Expansion: The grapes are gently pressed pneumatically, followed by a pre-clarification of the must. Alcoholic fermentation takes place over four weeks in French oak barrels, less than a third of which are new. The wine then matures for 14 months in the same barrels with regular bâtonnage (stirring of the lees) to enhance complexity and richness.
