Expansion: The grapes are gently pressed pneumatically, followed by a pre-clarification of the must. Alcoholic fermentation takes place over four weeks in French oak barrels, 50-60% of which are new. The wine then matures for 18 months in the same barrels with regular bâtonnage (stirring of the lees) to promote complexity and richness.

With vineyards from the Côte de Nuits to the Côte de Beaune, including numerous Grands Crus such as Corton, Clos de Vougeot and Chambertin-Clos de Bèze, Faiveley embodies the full aromatic range of Burgundy. Careful vineyard work, low yields and gentle ageing emphasise the individual character of each parcel.
