Her discreet cultivation is evident in the refinement of every detail and in the deceptively simple elegance of the house. Behind high garden walls, the sounds of the village seem to fade away; it is as if time stands still in the beauty and tranquility of this garden. However, in the subterranean world of the house's cellars, the special significance of time at Champagne Bollinger becomes apparent. After the first fermentation in small stainless steel or wooden barrels, the wine is bottled in spring and rests in the deep silence of the chalk cellars; Special Cuvée champagnes remain there for at least three years.
