Toni Gelabert, the traditional winemaker from Nahe Manacor in Mallorca, produces Burgundian-style wines that are highly sought after worldwide. Toni's family has been committed to biodynamic viticulture according to all the rules of the art since its establishment in 1979: herbal infusions and rock dust are just as much a part of the careful cultivation as harvesting according to the moon's phase. For example, a Chardonnay matures more towards the new moon to increase its fruity potential. Red grapes, on the other hand, are harvested more towards the full moon. The grape selection is, of course, done by hand, and the grapes are meticulously sorted in the field. The effort Toni puts in is enormous. The result is worth it: the wines are fine, elegant, mineral – all in harmony with nature!
