Toni Gelabert, the traditional winemaker from near Manacor in Mallorca, produces Burgundian-style wines that are highly sought after worldwide. Since its founding in 1979, Toni's family has focused on natural viticulture according to all the rules of the art: herbal infusions and rock dust are as much a part of careful cultivation as harvesting according to the moon's phases. For example, a Chardonnay ripens more towards the new moon to increase its fruity potential. Red grapes, on the other hand, are harvested closer to the full moon. The grape selection is, of course, done by hand, and the grapes are meticulously sorted in the field. The effort Toni puts in is enormous. The result is worth it: The wines are fine, elegant, mineral – all in harmony with nature!
