Expansion: The grapes are harvested by hand and carefully sorted. Fermentation takes place traditionally in open wooden vats with regular pigeage (punching down the cap) to ensure optimal extraction of color, aromas, and tannins. The wine then matures for 14 months in French oak barrels, one-third of which are new, to impart complexity and structure.
