Horse of the Andes
The 2019 Cheval des Andes has a reductive vinification and aging, which makes the wine a little shy and needs time to open up, as one of their goals was to make it more ageable. The wine is young and delicate and a little oaky, which Gabillet attributes to the reduction; it is ripe without being excessive. So the wine might be less approachable when young and should develop slowly in the bottle. It is tasty and smooth and has the balance they were aiming for. It is meant to be the Argentinian expression of Cheval Blanc. And I couldn't agree more.
