Bénédicte and Stéphane Tissot have long been a benchmark in the biodynamically managed Jura region. Their Château-Chalon 2016 is a true Vin Jaune – purely Savagnin, oxidatively aged under flor yeast for at least 6 years and 3 months in un-topped-up barriques. This strict method ensures maximum terroir expression and depth.

In the glass, it presents a rich amber gold. The nose develops a complex interplay of walnut, green nut, curry, dried apple, mushrooms, iodine, kerosene, and a delicate flinty touch – pure ethereal depth. On the palate, a rich, spicy body unfolds with lively acidity, salty minerality, and an infinitely long, velvety finish.
