Klassische Vinifikation
Auch im Keller folgt Domaine de l’Église einem eher klassischen Pomerol-Stil. Nach der Lese werden die einzelnen Partien separat vinifiziert. Gärung und Mazeration dauern insgesamt etwa vier Wochen. Anschließend reift der Rotwein rund 18 Monate in französischen Barriques. Neues Holz spielt traditionell eine wichtige Rolle, soll aber die Frucht und die charakteristische erdige Würze des Terroirs nicht überdecken.
Das Ergebnis ist ein Pomerol, der nicht allein auf unmittelbaren Charme und üppige Merlot-Frucht setzt, sondern eine vergleichsweise feste Struktur besitzt. Mit Flaschenreife entwickeln sich neben dunkler Frucht zunehmend Tabak, Gewürze, Trüffel und erdige Noten.
Ein eher diskreter Pomerol
Domaine de l’Église steht ein wenig im Schatten seiner berühmteren Nachbarn. Das liegt kaum am Terroir: Die Parzellen befinden sich in einem ausgezeichneten Teil des Plateaus, und die Kombination aus Lehm, Kies und eisenhaltigem Untergrund bietet beste Voraussetzungen für Merlot.
Vielmehr hat das Château lange einen ausgesprochen traditionellen Stil gepflegt. Die Weine sind strukturiert, ernsthaft und auf Entwicklung angelegt, weniger auf die opulente Frucht und unmittelbare Zugänglichkeit, die manche moderne Pomerols auszeichnet.
Unter den Weinen aus Bordeaux ist Domaine de l’Église also eine eher diskrete Adresse – historisch bedeutend, klassisch im Stil und mit genügend Substanz für eine lange Flaschenreife. Wer Pomerol nicht allein über Opulenz, sondern auch über Struktur und Terroir kennenlernen möchte, findet hier eine besonders interessante Interpretation der Appellation.
