Merlot auf Kalkstein und Ton 

Die Reben von Château Bellevue Mondotte wachsen auf Kalkstein mit einer vergleichsweise dünnen Auflage aus Ton und Lehm. Die exponierte Hanglage besitzt eine gute natürliche Drainage, während der Kalkstein Wasser speichern und den Reben auch in trockenen Perioden zur Verfügung stellen kann. 

Das ist besonders für Merlot interessant. Die früh reifende Sorte erreicht auf der südlichen Exposition problemlos ihre physiologische Reife. Gleichzeitig wirkt der kalkreiche Untergrund einem zu breiten, ausschließlich von Fruchtreife bestimmten Stil entgegen. Der Weinberg ist zu rund 90 % mit Merlot bestockt. Die verbleibende Fläche teilen sich Cabernet Franc und Cabernet Sauvignon. Die Reben besitzen ein beträchtliches Alter, ein Teil ist mehr als 50 Jahre alt. 

Merlot liefert entsprechend das Zentrum des Weins: dunkle Pflaume, Schwarzkirsche und Beerenfrucht sowie eine dichte Textur. Cabernet Franc ergänzt florale und kräuterwürzige Nuancen, während Cabernet Sauvignon in kleiner Menge zusätzliche Struktur beisteuert. 

Ein besonderes Mikroklima 

Die Lage am südlichen Rand des Plateaus unterscheidet Bellevue Mondotte von flacheren Bereichen Saint-Émilions. Die Reben profitieren von intensiver Sonneneinstrahlung, gleichzeitig sorgt die erhöhte Position für eine gute Luftzirkulation. 

Das schafft einen interessanten Gegensatz. Die südliche Exposition fördert eine vollständige Reife und erklärt einen Teil der Konzentration des Rotweins. Kalkstein und Höhenlage liefern dagegen Frische und Spannung. 

Dieses Wechselspiel prägt den Charakter des Weins. Bellevue Mondotte gehört stilistisch zu den kraftvolleren Saint-Émilions, besitzt aber eine mineralische Kontur, die den Unterschied zu Weinen von tieferen Sand- oder Kiesböden deutlich macht.

Präzise Arbeit auf kleiner Fläche 

Die überschaubare Größe erlaubt eine entsprechend detaillierte Bewirtschaftung. Die einzelnen Parzellen können abhängig von Reife und Exposition gelesen und vinifiziert werden. In den vergangenen Jahren wurde die Arbeit im Weinberg zunehmend auf nachhaltige beziehungsweise biologische Methoden ausgerichtet. 

Auch im Keller ist die geringe Produktionsmenge ein Vorteil. Die Trauben können streng selektiert und in kleinen Partien verarbeitet werden. Die Vinifikation folgt der bei den Gütern der Familie Perse etablierten präzisen Arbeitsweise. 

Der Stil hat sich dabei über die Jahre entwickelt. Die Weine der Perse-Domänen waren lange für hohe Reife, intensive Extraktion und einen ausgeprägten Einsatz neuen Holzes bekannt. In jüngeren Jahrgängen steht stärker die Balance zwischen Konzentration und Frische im Mittelpunkt. 

Kraft und Kalkstein 

Bellevue Mondotte bleibt dennoch ein konzentrierter Saint-Émilion. Die Kombination aus alten Merlot-Reben, niedrigen Erträgen und warmer Südexposition sorgt für eine ausgeprägte Fruchtintensität. 

Schwarzkirsche, Brombeere und Pflaume verbinden sich mit Lakritz, Gewürzen, Veilchen und mineralischen Noten. In der Jugend ist das Tannin deutlich präsent. Die kalkreichen Böden geben dem Wein jedoch eine straffe Struktur und eine Frische, die besonders im langen Finale hervortritt.
