Vin Jaune – Icon of the Jura
Vin Jaune is made exclusively from the white grape variety Savagnin, which is native to the Jura region. The grapes are harvested late to ensure high ripeness. After harvesting, the grapes are gently pressed and the must is fermented like a classic white wine. This is followed by malolactic fermentation, which softens the wine's acidity. After fermentation, the young wine is transferred to used, unsulphured oak barrels, which are intentionally not filled completely. An airspace remains, allowing a layer of yeast, known as "Voile" (similar to the flor in sherry), to form on the wine's surface.
The wine then matures for at least six years and three months under this yeast layer. During this long period, the flor yeast partially protects the wine from oxidation, but also allows some contact with oxygen. This allows Vin Jaune to develop its characteristic nutty, spicy, and sometimes curry-like aromas. After maturation, the wine is bottled in the traditional 0.62-liter Clavelin bottle, which symbolizes how much wine remains after evaporation during the long storage period. Due to its special maturation process, Vin Jaune is extremely long-lived and can age for decades, sometimes even over a century. This complex and unique method makes it the flagship of the Jura and a specialty in the world of wines
