Auch im Keller verfolgt das Weingut einen eigenständigen Weg. Die Parzellen werden separat vinifiziert und möglichst schonend extrahiert. Der Grand Vin reift traditionell teilweise in neuen französischen Barriques. Gleichzeitig spielen Amphoren inzwischen eine bedeutende Rolle. 

Durfort-Vivens begann bereits in den 2010er-Jahren mit Tonamphoren zu experimentieren und baute deren Verwendung anschließend deutlich aus. Sie erlauben eine Reifung ohne zusätzliche Holzaromatik und sollen damit Frucht, Frische und die Eigenheiten der unterschiedlichen Parzellen möglichst unverstellt erhalten. Barriques und Amphoren werden deshalb nicht als Gegensätze verstanden, sondern gezielt miteinander kombiniert. 

Eine besonders ungewöhnliche Facette des Châteaus ist ein reinsortiger Cabernet Sauvignon, der ohne Schwefelzusatz erzeugt wird. Er zeigt, wie weit Durfort-Vivens mittlerweile bereit ist, über die traditionellen Konventionen eines klassifizierten Bordeaux-Weinguts hinauszugehen. 

An der Spitze steht "Château Durfort-Vivens", der Deuxième Grand Cru Classé. Nur 40 % der Lese gelangt in diesen Grand Vin. Cabernet Sauvignon dominiert die Assemblage meist deutlich und kann in einzelnen Jahrgängen mehr als 90 % erreichen. 

Daneben erzeugt das Weingut mit "Vivens" beziehungsweise je nach Markt auch "Relais de Durfort-Vivens" genannt, einen zugänglicheren Wein, der die Herkunft und Stilistik des Hauses in einer früher trinkreifen Form interpretiert. Auch hier haben Amphoren für den Ausbau zunehmend an Bedeutung gewonnen. 

Die vergleichsweise geringen Erträge und die strenge Selektion tragen dazu bei, dass Durfort-Vivens heute qualitativ wieder dort angekommen ist, wo die Klassifikation von 1855 das Château einst verortete. 

Die Entwicklung von Château Durfort-Vivens gehört zu den bemerkenswerten Geschichten im modernen Médoc. Ein lange wenig beachteter Deuxième Grand Cru Classé hat sich unter Gonzague Lurton zu einem der konsequentesten biodynamischen Güter der Region entwickelt.
