The grapes are carefully hand-picked and fermented in stainless steel tanks before maturing for about 16 months in French barriques, one-third of which are new. The Les Ormes de Pez winery boasts a history spanning more than two centuries. The name "Ormes" means elms, referring to the trees that once lined the estate; "Pez" refers to the village of the same name in the Médoc.

Since 1930, the Château has been owned by the Cazes family, who have meticulously restored and modernized the estate. Under the current direction of Jean Charles Cazes, the house harmoniously blends tradition and innovation.

With approximately 40 hectares of vineyards and its classification as Cru Bourgeois Exceptionnel, Château Les Ormes de Pez is one of the most respected producers in the Saint-Estèphe appellation.
