Red wines from Pauillac (Médoc, Bordeaux – Left Bank) are considered the epitome of classic Bordeaux: powerful, structured, and elegant at the same time. Cabernet Sauvignon (usually as a blend with Merlot & Co.) is the defining style, supported by warm gravel soils that provide depth, firm tannins, and great aging potential. Typical notes include blackcurrant (cassis), cedarwood, and a cool, mineral spice – ideal with beef, lamb, and hearty braised dishes. Pauillac also unites an especially large number of renowned estates and classified Crus, which is why the appellation is so sought after by collectors.
