Der "Domaine de Chevalier Rouge" gehört zu jenen Premium-Weinen aus Bordeaux, die Zeit brauchen. In den vorliegenden Angaben wird hervorgehoben, dass der Wein sein volles Potenzial oft erst nach rund zehn Jahren Flaschenreife entfaltet. 

Vergoren wird in Edelstahltanks, die Extraktion erfolgt unter anderem durch manuelles Unterstoßen. Anschließend reift der Rotwein je nach Jahrgang etwa 18 bis 22 Monate im Fass. Der Anteil neuer Eiche liegt typischerweise bei ungefähr 35 %. 

Dieser vergleichsweise moderate Neuholzanteil passt gut zum Stil des Hauses. Die Eiche soll Struktur geben, ohne Frucht und Terroir zu überdecken. Mit zunehmender Reife treten neben Cassis und Grafit komplexe Noten von Tabak, Leder, Erde und Gewürzen hervor. 

Mindestens ebenso berühmt ist der "Domaine de Chevalier Blanc". Die rund sechs Hektar Weißweinfläche sind zu etwa 70 % mit Sauvignon Blanc und zu 30 % mit Sémillon bepflanzt. 

Sauvignon Blanc liefert Zitrusfrucht, Kräuter, Frische und eine salzige Spannung. Sémillon bringt Textur, Substanz und ein außergewöhnliches Reifepotenzial. Junge Weine zeigen häufig weißen Pfirsich, Zitrus, Fenchel und florale Noten. Mit der Flaschenreife entwickeln sich zusätzliche Nuancen von Honig, Wachs, Nüssen und Gewürzen, ohne dass die Frische verloren geht. 

Der Weißwein wird im Fass vergoren und auf der Hefe ausgebaut. Rund ein Drittel der Fässer ist neu. Damit gehört der Ausbau klar zum Stil, bleibt aber auf Balance ausgerichtet. 

Die Familie Bernard arbeitet ihre Weinberge biologisch beziehungsweise biodynamisch, verzichtet aber auf eine offizielle Zertifizierung und stellt diesen Aspekt nicht in den Vordergrund. 

Das passt zur Philosophie der Domaine: Technik und Bewirtschaftung sollen dem Wein dienen, nicht umgekehrt. Selektive Lese, hohe Pflanzdichte, präzise Parzellenarbeit und ein kontrollierter Holzeinsatz zielen darauf, Frische, Struktur und Herkunft möglichst klar abzubilden. In schwierigen Jahren hat man bei der Wahl der Spritzmittel dann allerdings auch freie Hand. 

Die Domaine de Chevalier gehört zu den wenigen Weingütern, deren rote und weiße Weine gleichermaßen zu den Spitzen ihrer jeweiligen Kategorie zählen. Der Rotwein verbindet Cabernet-geprägte Struktur mit der Geschmeidigkeit von Merlot, der Würze von Cabernet Franc und der Spannung von Petit Verdot. Der Weißwein setzt auf die klassische Verbindung von Sauvignon Blanc und Sémillon.Was beide verbindet, ist die kühle Präzision der Waldlage.
