Extremely concentrated and balanced, also noticeable is a short-term, intensive release of CO² immediately after opening. The bottle should be opened at least half an hour, preferably a whole hour, before tasting rather than decanting. The original primary aromas of star fruit, pineapple, orange zest, boscop, papaya and elderberry now take a back seat so that the secondary and tertiary aromas come into their own. Now yeast plait, black truffle and a delicate yet deep herbal note underlined by subtle wood notes, slightly smoky as well as a hint of petrol, viscous and the expressive slate minerality typical of the Doctor as saltiness come to the fore. The wine seems much fresher and tighter than the normal version and develops more and more intensely the longer you smell it and swirl the glass.
