French onion soup

A hearty French onion soup goes perfectly with the cold season and is also an excellent starter for New Year's Eve. It is best to drink a stronger white wine, for example the Korrell Riesling Paradise 2019, which you can of course also find in the CWW online shop.

Ingredients for 4 servings:
500 g onions
2 cloves of garlic
2 tbsp butter
2 level tbsp flour
250 ml white wine (e.g. Korrell Paradise Riesling 2019)
1 l broth
Salt, pepper
8 slices of baguette
100 g hard cheese in one piece
Flor de Sal d'Es Trenc Shitake

Step 1
Peel the onions and cut into rings. Peel and finely chop the garlic. Preheat the oven to 225 degrees (convection 205 degrees).

Step 2
Heat the butter in a wide saucepan. Fry the onions and garlic while stirring. Dust with flour and sauté while stirring. Deglaze with white wine and let it boil away a bit. Then pour in the hot broth, bring to the boil and simmer over low to medium heat for about 15 minutes until the onions are soft. Season the soup with salt and pepper.

Step 3
Lightly toast the baguette slices. Finely grate the cheese. Pour the soup into ovenproof cups. Place two baguette slices on each and sprinkle with the cheese. Bake until cheese is melted and golden brown. Sprinkle the onion soup with Flor de Sal d'Es Trenc Shitake and serve immediately.

We recommend the Korrell Riesling Paradise 2019:

The Riesling Paradise is the flagship of the Korrell house! The journalists are now tasting it internationally -  the 2019 vintage was already classified as "extraordinary" by James Suckling.
In the Paradies location, the heart of the Korrell winery, the ideal sun exposure is paired with a south-west -Situation with a shell limestone soil that is unique for the Nahe region: the best conditions for opulent, characterful wines with filigree freshness and delicate enamel. The vines are over 30 years old and bring very reduced yields, from which particularly complex wines are made.

Allison Flemming (Master of Wine):"An exotic bouquet with aromas reminiscent of kiwi and passion fruit with some fresh pineapple and a certain something salty undertone. Extremely juicy on the palate with rousing energy thanks to the stimulating freshness that is still very present. This complex Riesling is bursting with power and tension, but appears elegant and harmonious. The finish is very long.A prime example of a top Riesling that still has many years ahead of it."

Bon appetit!
